Oh hey! Remember that pesto you have in the cabinet from our chicken pesto a couple weeks ago? Well, pull it out! We’re making pasta! I used whole wheat rotini noodles, pesto, mozzarella, and chicken. I needed something easy and wanted to use ingredients I already had; I even have enough leftovers for tomorrow:)

I’m mixing things up today…literally:)
Let me tell you about an easy, healthy, on the go breakfast option: blueberry & banana smoothie!
If I did actually have to live on bread alone, I easily could! I realized I was eating bread with every meal and don’t necessarily want all of those carbs. I started trying to come up with a bread-less breakfast food and that’s when I discovered this smoothie!
Ingredients:
Half a banana
Approximately 1 cup of blueberries
1 tablespoon of peanut butter
Half a package of dried oats
I use about 4 ounces of almond milk, but water or regular milk would work as well! Blend all together to your preferred consistency and you will be set in no time! It normally makes around 12 oz. depending on how much liquid you add.

P.S. don’t be afraid of Great Value brand. It’s cheaper and tastes just as good. 🙂

My Sunday Adventure

Sunday afternoon I decided to take a small adventure around Nashville. I have lived here since January and use my gps to nearly take me everywhere I go. Yesterday I decided to pack a few cookies in a ziplock bag, pour some Dr. Pepper in a mason jar, and head off without using my maps app. While driving through Nashville and venturing out to Franklin I was thinking on the sermon I had heard earlier that morning reminding me that God is not holding out. Everything I have, my state of spiritual maturity, my relationships, and everything else are all exactly what He wants me to have for this time in my life. As I was looking out my window at the beautiful sky and green fields I smiled just thanking God that He holds nothing back. So, as I often find myself wishing I had something I don’t, or wishing I was more spiritually knowledgeable, or even wishing I was already settled in a full time career, God reminded me that all of that is exactly what He has for me and where He has me right now. Me wishing for more is simply not trusting that God is sovereign and saying I think I know what is better for my life. Btw, I absolutely don’t. I enjoyed my little drive and think I may need to make them a regular occurrence. Today I’m thankful for a house that only young girls would live in, for parents that support me, friendships that are full of spontaneity, and a time in life that won’t last forever. What are you thankful for?

Tonight I made my own version of chicken pesto, and I’d say it was pretty delicious. I cooked the chicken breasts in olive oil and then topped it with mozzarella cheese, tomato, and basil pesto. So easy and healthy! C’mon surely there’s a man out there heating up a frozen dinner wishing someone was making him this delicious meal. Haha😊 somebody’s bound to wife this girl one day! Don’t worry mom, I’m still waiting on the right one that you’ll approve of.

This evening I’m inviting you to eat dinner on my deck. It’s a beautiful evening here in Nashville and I was craving Chipotle, as always, so I decided to make my own chicken bowl.

Chicken and rice bowl:
I cooked one chicken breast in coconut oil and boiled a cup of one minute brown rice. Once both of those were done cooking I simply chose what I wanted to mix in and started chopping. I mixed in home grown tomatoes, avocado, mozzarella cheese, and a dab of low fat sour cream. I mixed all the ingredients together and dug right in with strawberry crush in a mason jar to wash it down!

One of my favorite products

I thought I should introduce you to one of my favorite products for my skin. Grapeseed oil: chances are if you are looking at me, I have this product on my face. I put it on every night before bed and every morning under my makeup. I’ve probably already scared most of you off saying I put oil on my face. Fun fact: oil fights oil. So…if you have an oily face this is even a product for you! I originally started using it for some discoloration I had on my face and it is nearly gone! I love using it under my make up to give it a bit of a dewy look and it has completely replaced any moisturizer I used to use. Grapeseed oil is great for skin brightening, and it has lots of vitamin E which is fabulous for the fight against aging. In my opinion, no matter your age, grape seed oil is a wonderful product. I buy mine at Whole Foods for only $5!
