This evening I’m inviting you to eat dinner on my deck. It’s a beautiful evening here in Nashville and I was craving Chipotle, as always, so I decided to make my own chicken bowl.
Chicken and rice bowl:
I cooked one chicken breast in coconut oil and boiled a cup of one minute brown rice. Once both of those were done cooking I simply chose what I wanted to mix in and started chopping. I mixed in home grown tomatoes, avocado, mozzarella cheese, and a dab of low fat sour cream. I mixed all the ingredients together and dug right in with strawberry crush in a mason jar to wash it down!
